Chicken Fajita Quesadilla

Ingredients
1 skinless chicken breast, pounded to 1/4 inch thicknessTaco Seasoning (any kind)4 Large Low Carb Tortillas (La Tortilla Factory)2 large slices of onion1/2 cup bell pepper slices (red, green, whatever you like)1/4 Reduced Fat Sargento Sharp Cheddar
Directions
Sprinkle both sides of chicken breast with taco seasoning and pan fry with cooking spray in non-stick skillet. Brown on both sides until cooked through. Remove from pan and put aside. Add a little more cooking spray to pan and saute onions and peppers until tender.

With two forks, shred apart chicken breast on a plate or cutting board. Return chicken to pan and stir fry for a few minutes with the peppers and onions. Add about a tsp of water to deglaze the pan and really get the flavors mixed.

Place one large tortilla in a separate pan (use cooking spray) on medium heat. Place 1/2 of the cheese on the tortilla (spread around). Place 1/2 of the chicken mixture on the tortilla (spread around). Place another tortilla on top. When one side is golden brown, carefully flip the quesadilla over to brown the other side and melt all of the cheese.

Repeat with remaining tortillas & ingredients. Two large tortillas serve 4 people. Great with a small side of beans and salad. Can also add a dollop of reduced fat sour cream on top of your quesadilla!
