Ingredients
Spicy Italian vegetarian sausage, 4 links, dicedBhutanese Red Rice, 2 cups (cooked)1 c veg brothBeans, red kidney, 1 canDiced Tomatoes, 1 canFrozen or fresh bell pepper, choppedOkra, frozen, package1 medium Onion
Directions
Saute onion and peppers in a little oil until softened. Add 2 tsp cajun seasoning. Add tomatoes and stir. Add remaining ingredients and simmer, covered, until vegetables are done. Makes about 8 servings.
