Lemon Squares

6 Tbsp. butter0.25 cup granulated sugar0.25 tsp. salt1 cup all-purpose flour2 eggs0.75 cup granulated sugar2 Tbsp. all-purpose flour0.25 tsp. finely shredded lemon peel3 Tbsp. lemon juice0.25 tsp. baking powderpowdered sugar, for decoration
1. Grease an 8X8X2 inch baking pan. Beat butter for 30 seconds, add the 0.25 cup sugar and salt, beating until fluffy. Stir in the 1 cup flour. Pat dough onto bottom of pan. Bake in a 350 � oven for 15 minutes. Let cool for 15 minutes.
2. Beat eggs, add remaining 0.75 cup sugar, 2 Tbsp. flour, lemon peel, lemon juice, and baking powder. Beat 3 minutes, or until slightly thickened. Pour over baked layer. Bake in a 350� oven for 25 minutes or until light golden brown around the edges and centre is set. Cool.
3. Sift powdered sugar over top, if desired. Cut into 16 squares.

ALILDUCKLING
These are ok, but i would like a little tarter. A little dry at first - then after an overnight on a plate covered w/plastic it was moister. Confectioners sugar would not stay on top very long I finally refrigerated what was left and after an overnight liked it better. GOOD nut stats. - 4/17/21
