L.R. oat bran sweet potato muffins with dates

Ingredients
147g (1-1/3 cup) oat bran30g (1/3 cup) ground flaxseed1-1/2 cup whole wheat flour 3 tsp. baking powder1 tsp. baking soda1 tsp. salt1-1/2 tsp. cinnamon]1-1/2 tsp. ginger1/2 tsp. nutmeg188g (1 cup) sucanat or brown sugar2-1/2 cups cooked mashed sweet potato2 T. oil2 cups buttermilk3 eggs2 tsp. vanilla159g (1 cup) pitted dates, chopped
Directions
Preheat oven to 400. In a large bowl combine oat bran, flaxseed, flour, bakinging powder, baking soda, cinnamon, salt, ginger, nutmeg and brown sugar. In a separate bowl, whisk together sweet potatoes, oil, buttermilk, eggs and vanilla. Stir sweet potato mixture into dry ingredients just until moistened. Stir in dates. Divide between 24 muffin cups. Bake for 20-25 minutes or until done. Makes 24 muffins.

    So good! The ginger is sharp but the muffin is sweet & delicate. I used 1 white sweet potato and 1 yam. Also added 1/2 cup walnuts. Without the cooking time indicated, I slightly undercooked one batch and overcooked the next, but were still great. I eat with FF plain yogurt dusted w/vanilla sugar. - 2/5/09
