Mom's Sausage and Spinich Quiche (1/8 of 1 pie = 1 serving)

1 lb ground sausage1/2 cup onion8 oz. cream cheese, softened5 large eggs10 oz frozen spinich, thawed and drained well2 9 in. frozen pie crustsSmall amount of parmesean cheese
Brown sausage and onion. Drain. Mix in cream cheese, drained spinich. Beat eggs well and add to mixture. Pour into pie crusts and bake at 350 for 40-50 minutes or until bubbly. Sprinkle with parmesean cheese.
NOTE: You may need to cover crust with aluminum part of the way through the baking process in order to not burn the crust.
