Crockpot black beans

Ingredients
Goya Black Beans Dried, 12 servingOnion, diced, 1.5 cupBell pepper (1 medium), 1 servingGarlic, 6 cloveCelery, raw, 5 stalk, medium (7-1/2" - 8" long) Cider Vinegar, 0.5 tbspLemon juice, 1 tspChili powder, 2.5 tbsp Oregano, ground, 1 tbsp Cumin, ground, 1 tbspSalt, .5 tspPepper, black, 2 dash Water, tap, 3 cup - enough to cover beans by approx 1"
Directions
1. rinse & drain black beans, pick out any bad beans/rocks
2. chop veggies, place at bottom of crockpot. top with black beans, add seasoning, vinagar, lemon juice & water (cover by approx 1"
3. cook on high 5-5.5 hours
4. Use stick blender to puree soup (as desired)

    I just made this recipe yesterday. Since I didn't have any celery, I left that out, and I substituted long sweet peppers for the bell. I also had soaked the beans the night before. It came out absolutely awesome! I will definately make it again. It was easy, tasty, and filling. - 11/15/10
