Quick and Easy Chicken Parmesan

Ingredients
1 can of Del Monte tomatoes with garlic and basil2 cups raw baby spinach3/4 onion chopped 3 garlic cloves chopped 3 Purdue chicken breast cutlets (2.8 oz each)1 cup part skim shredded mozzarella
Directions
Saute the onions, garlic and spinach. Cook chicken in saute pan, top with tomatoes and spinach mixture. Sprinkle with mozzarella and cook in pan until chicken is cooked through and cheese is melted. Makes 3- 1 chicken cutlet servings
