Ingredients
Cook and Serve Sugar Free/Fat Free Vanilla Pudding Mix3 cups Fat Free Milk1-15 ounce can pumpkin (unsweetened)1 teaspoon vanilla extract2 teaspoons of Healthy Exchanges Pumpkin Pie Spice OR 1 teaspoon of any other brand Pumpkin Pie Spice1/2 cup Splenda Granular12 slices Light Bread (40 calories or less), cut into cubes
Directions
Preheat oven to 350 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a large saucepan, combine dry pudding mix and milk. Cook over medium heat until mixture starts to thicken and begins to boil, stirring often. Remove from heat. Stir in pumpkin, pumpkin pie spice, Splenda, and vanilla extract. Add bread pieces. Mix gently to combine. Spread mixture evenly into prepared baking dish. Bake for 30 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 6 servings.

    Hmm, I'm thinking about making half this recipe, then using the other half of the pudding mix to make normal and serve over the top like ice cream. How many of those coffee sized packets of splenda would this be? - 6/11/13

    Finally! A dessert under 200 calories with a generous serving size! I am no fan of either pumpkin or bread pudding (I made this for my "getting fit friend"), but this dessert is very yummy!

    I will make this again and the only change I may make is to use a little less milk. - 11/29/11

    Very good! I followed the recipe exactly, and definitely used the right pudding, but it was still a bit runny. Placing it in the fridge for 15 more minutes after it cooled helped a lot. The nutritional info is off (80 calories from bread per slice is wrong, unless you use 80 cal per slice bread). - 10/31/09

    Each serving would have 80 calories from the bread, if you use the 40 calorie or less per a slice bread. As you get two 40 calorie or less slices per a serving. 40+40=80 or 40x2=80.

    BTW, sorry I just figured out the problem! So sorry! It's 12 slices of bread, NOT 6!

    I found it to sticky and gooey the bread was very soggy and had a weird taste to me I read other reviews and cut spice back which seemed balanced but just not a fmaily favorite - 11/15/08

    Did you make sure you used cook and serve pudding, and not instant? Also did you cook the pudding till it started to thicken? That would of made it not soggy.

    Oh no, I just figured this out, it's 12 slices NOT 6 slices. So sorry!

    I made this a few nights ago, and what I got was too spicy & very runny. Against my husbands wishes (who eats everythinf), I will make it again cutting the spice in half & using 2 cups of milk. Maybe it needed more cook time (although is was in for 35 min.) ff cool whip was a nice balanc - 11/12/08

    Are you sure you used cook and serve pudding?

    And you did the part on the stove till it thickened? You have to wait for it to thicken, which then it would not be runny.

    Sorry I just figured out the problem it's 12 slices of bread not 6. So sorry!

    Thanks for trying my recipe. I do like spice! Also it may be that I used a salt free, all natural spice from Healthy Exchanges. So it may not be as pungent as others on the market.

    I'm not sure where this "light" bread of less than 40 calories is but I used weight watchers brand which was 45 calories each. It tastes just like pumpkin pie - incredible! - 10/10/08

    I get different breads that are 40 calories or less a slice. Wonder Lighter, 40 calories, Liter 35, which is 35 calories a slice, Nickle-35 calories, Healthy Life-35 calories & there's others off the top of my head. If that helps.
    But, using WW 45 won't change it that much.
