Family Pumpkin Roll

Pumpkin, canned, 3/4 cup Egg, fresh, 3 large Granulated Sugar, 1 cup Baking Powder, 1 tsp Lemon juice, 1 tsp Cinnamon, ground, 2 tsp Ginger, ground, 1 tsp Nutmeg, ground, 1 tsp Flour, white, 3/4 cup Powdered Sugar, 1 cup, unsifted Low fat cream cheese, 1 pkg (8oz)Butter, salted, 4 tbsp Vanilla Extract, 1/2 tsp
Beat eggs on high for 3 minutes. Gradually beat in sugar, pumpkin and lemon juice. Stir together baking powder, cinnamon, ginger, nutmeg, salt and flour. Fold into pumpkin mixture. Spread in greased and floured 15x10x1 pan. Top with nuts (optional -- we don't) Bake at 375 for 15 minutes. Turn out onto a hand towel sprinkled with powder sugar. Starting at narrow end, roll towel and cake together. Cool. Unroll and spread filling and re-roll. chill. Serves 10.
