Potato and Butternut Squash Mash

2 medium potatoes1 small butternut squash (approx 400g)2 tsp margarine1 small red onion, chopped finely1 tbsp finely chopped shallots2 cloves garlic, minced1 tbsp chopped chives30ml / 1 fl oz non-fat milk
1. Peel the potato and cut into rough cubes. Remove the skin and seeds from the butternut squash and cut into cubes. Add to the potato and cook in boiling water until soft.
2. Melt the margarine and briefly fry the red onion, shallots and garlic.
3. Mash the potato and squash mix and add the milk to soften.
4. Stir in the onion mixture and half the chopped chives.
5. Serve with the remaining chives sprinkled on top.
