Peach Pumpkin Soup

Ingredients
Use a large can of Kroger Lite Peaches in pear juiceUse peaches, juice, and 1 cup of water
Directions
Bake or microwave sweet potatoes & discard skin.
Mix on low in blender so that there is still some texture to the soup. Simmer (very low) for 1/2 to 1 hour. Whisk often.

Makes 7 cups. 1/2 cup is a good serving. I add 3/4 cup quinola to each serving for more texture and better nutrition.
