Better Flourless Peanut Butter Cookies

1.5 cups natural unsweetened peanut butter (think Crazy Richard's)1.75 cups firmly pack light brown sugar (If you use regular peanut butter, use 1.5 cups sugar)2 large whole eggs (don't substitute egg whites--the yolks make the cookies puff up)3/4 tsp baking soda1.25 tsp baking powder1 cup semi-sweet chocolate chips
Preheat oven to 350 F.
Mix all but chips together until smooth. Fold in chips. Drop by rounded spoonfuls onto ungreased cookie sheets (I do tablespoonfuls and get about 42 2-inch cookies).
Bake for about 9-10 minutes, until the cookies puff up and brown. They will be very soft. Take out of oven and let them cool on sheets for 5 minutes, then scrape them off with a spatula and let them finish cooling (they'll harden).
