1 chicken breast (diced)1 400g can of Mexican chilli beans1 400g can of diced and peeled tomatoes1-2 cups mixed vegetables, frozen 1 clove garlic (crushed)1/4 tsp olive oil1Tbsp red chillies1Tbsp cumin1 Tbsp cayenne pepper
1) Put oil, garlic and chicken in large cooking pot until chicken is just seared (still pink inside).
2) Add the rest of ingredients and stir together thoroughly.
3) Let it simmer for at least 15 minutes until hot.
Spice to your taste (more chillies to increase hotness).
