Vina Chicken w/Lemongrass

Ingredients
1 pound chicken breast without skin, diced1 tablespoon honey3 tablespoons fish sauce, divided2 tablespoons lemongrass, minced1/2 teaspoon sesame oil3 cloves garlic, minced1 large onion, sliced thin1 teaspoon chili garlic paste1 tablespoon soy sauce3 tablespoons cilantro, chopped
Directions
Wash and dry chicken then dice. Combine honey and 1 tablespoon fish sauce in a bowl, add chicken and stir to mix. Let marinate 5-10 minutes. Combine remaining 2 tablespoons fish sauce, soy sauce and chili garlic paste in a small bowl, set aside. Heat sesame oil in a wok over high heat. Add garlic and lemongrass and stir fry until fragrant, but not brown, about 15 seconds. Add chicken and sir fry until the pieces turn white, about 1 minute. Move chicken to sides of the wok and add the onion to the center of the wok, add soy sauce mixture. Continue stir frying until the chicken is cooked, 2 to 3 minutes. Correct the season, add honey or fish sauce to taste. The dish should be a little sweet and salty. Sprinkle with cilantro and serve with rice.
