Foil Pack Chicken & Artichoke Dinner

3 cups wild rice (instant)3 cups warm water6 small boneless skinless chicken breast halves1 can artichoke hearts, drained, quartered2 cups chopped tomatoes (2 large)1/2 cup Krafts Light Done Right Italian Dressings1/4 pesto
Make 6 servings
Preheat oven to 400. Mix rice and water; spoon evenly on center on (6) large sheets of heavy duty foil. Top each w/ 1 chicken breast (uncooked). Cover evenly w/ artichoke & tomatoes, then drizzle evenly w/ the combined dressing and pesto.
Bring up foils sides. Double fold top and both ends to seal each packet, leaving room for hear circulation inside. Place packets in single layer in 15x10x1 inch baking pan.
Bake 30-35 min or until chicken is cooked through (170 degrees F). Remove packets. Let stand for 5 min. Place one packet on each plate and cut slit in foil to release steam before opening.
* Not my own recipe. Got from Kraft foods.com. Changed white rice to wild rice and zesty italian dressing to the Kraft Light Done Right dressing. This halfed the calorie intake. Hope you enjoy it. Me and my husband sure do!
