Better Choice Perogies

Ingredients
6 cups whole wheat flour4 cups sour cream4 cups cooked cauliflower mashed10 medium red potatoes boiled and mashed4 cups sharp cheddar cheese shredded3 tbsp sea salt1 tbsp black pepper
Directions
Makes approximately 6 dozen perogies. Serving size is 3 perogies.

Mix sour cream and flour and place in container in fridge for at least 2 hours.
Mix Potatoes, cauliflower, cheese, salt and pepper together and let cool. Can be made ahead and refrigerated.
On a floured board, roll out dough to 1/8" and cut into 3- 31/2 " rounds. Place 2-3 tbsp potato filling in centre and pinch edges together. Freeze raw. Gently boil in water until they float.
Substitute Sour Kraut in place of the cheese for a lighter fat tasty variation.
There is really no wrong filling- add fried onions, red peppers, shredded carrots etc.
