Asian Pear Chicken Salad

Chicken Breast, no skin, 3 breast, bone and skin removedWalnuts, 1 cup pieces or chipsButter, salted, 1 tbsp Brown Sugar, 6 tsp packedgreen leaf lettuce, 1.5 cupRadicchio, 2 cup, shredded Celery, raw, .5 cup, dicedCilantro, raw, 8 tbspAsian Pear, 1 cup choppedParmesan Cheese, shredded, 8 tbspAsian Pear, 2, cored and slicedDressingOlive Oil, Extra Virgin, 8 tbsChampagne vinegar, 4 tbspSalt, .25 tspBlack Pepper (Ground), 0.25 tspHoney, 1 tbsp Lemon juice, .5 tspGranulated Sugar, 6 tsp
Season chicken to taste with salt and pepper, grill, then set aside to cool.
Combine Walnuts, butter and brown sugar in a saute' pan and cook over medium heat, stirring, until the walnuts are coated, Remove from the pan and let cool. Break walnuts apart and set aside.
In a large bowl, combine lettuce, radicchio, celery, cilantro, chopped Asian pear and parmesan.
Whisk together all the dressing ingredients. Add to the salad and toss.
Arrange the salad on the plates. Slice the chicken and place on top of the salad. Place Asian pear slices and some walnuts on the side of each serving.
