Tangy Vegan Potato Salad

4 red potatoes with skin, cut into cubes1/4 cup VegenaiseJuice of 1/2 a lemon2 large celery stalks, diced4 green onions, diced1/2 tbs. garlic powder2 strips vegan bacon
1. Boil potatoes until soft-- about 10-15 minutes. Drain potatoes and put in a large bowl.
2. Cook vegan bacon until crispy. Crumble into bits.
3. Add lemon juice, Vegenaise, celery, onions, garlic powder and vegan bacon bits to potatoes. Mix until potatoes are well-mashed and the ingredients are mixed-in and evenly disributed.
4. Chill for 2 hours, until cold.
5. Serve on a hot day with veggie sandwiches!
Makes 4-5 Servings as a side dish
