Vegan Breakfast Couscous

Ingredients
3/4 cup vanilla soymilk1/4 cup orange juice1/2 cup dry couscous1/2 banana, mashed or sliced1 tsp cinnamon
Directions
In a small pot on high heat bring the "milk" and juice to a boil. Reduce heat and stir in couscous, banana and cinnamon. Cover with lid and simmer for 2-3 minutes. Turn off heat and let sit for an additional 2 minutes. Serve immediately. Makes two servings.
