Tortellini Soup

Ingredients
1 lb. Italian sausage2 cloves, garlic, diced1 c. chopped onion5 c. beef broth1 c. water2 cans tomatoes, diced1 c. slivered carrots (10 oz bag)grated fresh parmesean1/2 t. oregano1/2 t. basil8 oz can tomato sauce1 med. green pepper, diced8 oz. frozen tortellini1 1/2 c. zucchini, sliced3 T. parsley
Directions
Brown sausage in a 5 qt. pot. Drain. Reserve 1 T drippings and saute onions and garlic until tender. Add beef broth, water, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil. Reduce heat and simmer uncovered for 30 min. Skim fat off of soup. Stir in torellini, zucchini, parsley & green pepper. Simmer additional 35-40 min, or until tortellini are tender. Sprinkle parmesean cheese on each serving as desired.
