Cuban Brown Rice with Beans

Ingredients
1 cup uncooked rice (3 cups cooked)1 15 oz can black beans, drained1 large or 2 medium cloves of garlic1/2 yellow onion1 1/2 tsp minced jalapeno peppers1/3 bell pepper1 1/2 tsp ground cumin1/8 tsp ground pepper1/4 tsp sea salt (or table salt)1/4 cup red wine or cooking sherry3 tbsp olive oil
Directions
1) Cook brown rice according to instructions (takes approximately 45 minutes)

2) Meanwhile, sautee onions and garlic with the olive oil in a frying pan for 5 minutes (or until onions are translucent)

3) Add remaining ingredients and let simmer for 4 to 5 minutes

4) Remove from heat and mix with brown rice

Makes 6 servings

    I added 1/2 cup of tomato sauce, 1 tbsp. lemon juice, 2tsp. paprika and used red wine vinegar in place a wine. Delicious will definately make this again. Can also use red and white beans. - 2/1/10
