Bacon Fried Rice

Ingredients
1 cup brown rice1 tsp olive oil2 cups water2 tsp dry onion1 tsp minced garlic 1/4 tsp dry ginger1/2 lb bacon, cut, cooked, drained1 cup diced carrot1 cup diced celery2 Tbsp bacon drippings2 tbsp soy sauce
Directions
Cook rice, cool.

Cook and drain bacon.

Saute veggies in 1 Tbsp drippings; remove.

Fry rice in 1 Tbsp drippings; crack eggs over rice and stir.

Combine all and add soy sauce.

Makes 4 one cup servings
