Sauce =1/4 cup Greek Nonfat Plain Yogurt1/4 cup Light Cream Cheese1 tsp Worcestershire Sauce1/2 tsp Oregano1/2 tsp Garlic Powder1/2 tsp Onion Powder1/2 tsp PaprikaSplash of Lime JuicePinch of Ground GingerPinch of Sea SaltPinch of Black PepperHandful of CilantroPita =5 links Mild Italian Sausage, casings removed4 Whole Wheat Pitas, halved2 cups Cherry Tomatoes, halved2 Garlic Cloves, minced1 Red Bell Pepper, de-seeded and chopped1 Zucchini, with skin, chopped1 Red Onion, chopped1 tsp Extra Virgin Olive OilPinch of SagePinch of Sea SaltPinch of Black Pepper
1) Preheat skillet
2) Preheat toaster oven or broiler
3) Whisk all sauce ingredients together and set aside
4) Roll sausage into gumball-sized balls and place in skillet with EVOO. When sausage is mostly cooked, drain as much fat out as possible.
5) Add tomatoes, garlic, red bell pepper, zucchini, red onion, sage, sea salt, and black pepper to skillet. Toss for a couple minutes until the sausage is fully cooked. The veggies should not caramelize too much - flavor and nutrients cook out
6) Slice pitas in half and place under broiler or in toaster oven. Watch closely - it usually takes less than a minute to toast.
7) Fill pita halves with sausage-veggie mixture and top with sauce. Enjoy.
