Cut bacon into 1/4 inch wide strips, place into cold pan and turn heat to med/med-high. Cook stirring occassionally until bacon is cooked to desired crunchiness. Meanwhile, mince fresh parsley, dice onion and mince garlic. Remove cooked bacon, leaving the rendered fat in the pan. Saute onion, garlic and parsley in the bacon grease until onions carmelize. Add 4-5 cups of homemade chicken stock and bring to boil. Wash and chop potato into 0.5-1inch cubes. Add to boiling pan and reduce heat. Cook till potatoes are tender, about 30-40 min.
