Shrimp/turkey sausage Jambalaya

Ingredients
1 lg onion peeled/diced3 cloves minced garlic2 stalks celery diced2 med sweet red peppers diced2 carrots diced15 z can crushed tomatoes1 c long grain brown rice1 12 oz pkg andouille turkey sausage cut into 1/2 thick rounds1 tsp hot sauce2 Tbsp minced thyme1 tsp sea salt1/2 tsp ground pepper2 cups water 3 Tbsp minced parsley1 lb peeled deveined shrimp
Directions
1. place first 8 ingredients in that order in crockpot
2. add hot sauce, thyme salt and pepper and water
3.cover cook 8-9 hours on low
4. 1 hour before finished cooking toss in parsley & shrimp, stir until well combined adding more water if needed
