Banana Raisin Bran Muffin

1 Cup Bananas1 egg1/2 cup non-fat milk2 Tbsp Olive oil1 1/2 cup Raisin Bran Cereal1 cup Organic 100% Whole Wheat Pastry Flour1/4 cup packed brown sugar2 tsp baking powder1/4 tsp baking soda1/4 tsp cinnamon1/8 tsp nutmeg1/4 tsp salt
Preheat oven to 400 degrees. Line muffin tins. In medium bowl combine banana, egg, oil, milk and cereal. Let stand 10 minutes. Stir to bread up cereal. In large bowl combine flour, baking powder, sugar and soda, salt, nutmeg, cinnamon. Add cereal mixture all at once to dry mixture. Stir just until incorporated. Spoon evenly into muffin cups (I weighed each one to make sure they were the same for calorie content). Bake 12 large muffins for 25 to 30 minutes.
