Bobo de Camarao da Dyene

Ingredients
2 lb fresh shrimpsalt- 8 garlic cloves- juice of one lemon - pepper- 32oz yucca (you can find them in the frozen section already peeled and cut)- 1 onion- 1 bay leaf- 6 spoons of olive oil- 1 can of coconut milk - 1 cup of leek- 2 cans of tomato sauce- 1 green, yellow and red bell pepper- 2 table spoon of "azeite de dende" (you can find in Brazilian Specialty stores)
Directions
1.Wash the shrimp with water and season with salt, 2 garlic clove, pepper and lemon juice.
2.Let it marinade
3.Then boil the yucca with the bay leave
4. When soft, take some of the water out and add the coconut milk.
5.In another pan, heat the olive oil and add onion and garlic. Let it brown.
6.Add the shrimp and let it brown a bit
7.Add the diced tomato, the leek, bellpeppers and let it cook for about 10 minutes.
8. Then you add the yucca with the shrimp and let it boil.
9. Bom Apetite! Enjoy!

Makes 12 1 cup serving. Serve with white rice and a simple side salad. This is a crowd pleaser and it can be frozen.
