Whole Wheat Pumpkin Pancakes

1 cup whole wheat flour2 tsp baking soda1 egg1/2 cup vanilla almond milk1/4 cup water1/4 cup pumpkin pureedash salt, cinnamon, vanilla extract
Mix dry ingredients separately from wet ingredients, then add dry to wet. Let mixture sit a few minutes before cooking. Drop by 1/4 cup portions to frying pan and cook until top side is nearly dry and then flip. Cook a minute more until it springs back lightly when you poke it.
I added 2 tbsp of natural peanut butter and about a tbsp of mini chocolate chips to my serving instead of butter and syrup. The calorie count for the peanut butter and choc chips is not in the original calculation for the recipe.
Makes 2-4 servings. Nutritional information is based on three servings.
