Baked Pesto Manicotti

Ingredients
- 1 1/2 cups Ragu spaghetti sauce- 1 egg, lightly beaten- 1 cup ricotta cheese (part skim milk)- 3/4 cup mozzarella shredded (estimated 1.5 oz)- 1/4 cup parmesan- 1/8 cup pesto- 6 manicotti shells, cooked and rinsed in cold water (estimated 4oz noodles)
Directions
- spread 1/2 cup pasta sauce on bottom of 9" baking dish
- mix egg, cheeses, and pesto until well blended; spoon mixture into resealable plastic bag and cut off corner of bottom
- fill shells with cheese mixture into both sides
- place manicotti over sauce and pour remaining sauce on top
- cover with foil
- bake for 40 min at 350F

    This was very yummy with the pesto. I had ricotta cheese left over so I added sliced mushrooms and crushed garlic minus the pesto but kept the recipe the same and that was also really good..So we ended up with manicotti two ways.. - 2/11/10
