Yellow Sweet Corn, Canned drained, 1 can (12 oz) (Not creamed)Cottage Cheese, 1% Milkfat, .5 cup Olive Oil, .25 cup Milk, 1%, .5 cup Egg, fresh, 2 large Cheddar or Colby Cheese, Low Fat, .5 cup, shredded Baking Powder, 2 tsp Baking Soda, 1 tsp Salt, 1 cup Granulated Sugar, .25 cup Yellow Cornmeal, 1 cup *All-purpose flour .5 cup
Bake 350 for 30-35 min. Makes 12 muffins.
Using stick blender, blend cottage cheese and corn. Add remaining wet ingredients. Blend until smooth. Add baking power, soda and salt. Blend. Add cheese and remaining ingredients and stir until combined. Pour into muffin tins and bake.
