Shrimp Etouffee

2 Tbsp Smart Balance2 cups chopped onions1 cup chopped celery½ cup chopped bell peppers1 pound peeled shrimp (fresh or frozen) *2 Bay leaves1 tablespoon flour1 cup water1 clove garlic1 teaspoon salt¼ teaspoon cayenne pepper2 tablespoons chopped parsley3 tablespoons chopped green onions
Melt Smart Balance in a large skillet over medium-high heat. Add onions, celery, bell peppers, and sauté until soft and golden (approx. 10 minutes). Add garlic and sauté another minute.
Add shrimp and bay leaves. Reduce heat to medium.
Stirring occasionally, cook until shrimp begin throwing off a little liquid, approx 5-10 minutes.
Dissolve flour in water in a bowl. Add to shrimp mixture and season with salt and cayenne. Stir until mixture thickens, about 4 minutes. Add parsley and green onions and cook for about 2 minutes.
Remove bay leaves and serve over white rice.
