Ingredients
1 Flour Tortilla1 Large egg1/4 cup onion, chopped1/4 cup bell pepper, chopped (your choice of color)1.4 cup Jalapeno pepper, chopped 1/4 cup mushrooms, 1 serving ground lean sausage1/4 cup shredded cheeseSalsa (optional)
Directions
Take 1/4 cup each chopped onion, chopped bell pepper, chopped Jalapeno pepper, chopped mushrooms, and ground lean sausage. Saute until bell peppers are tender and onions caramelize. Beat one egg with 1 tspn of water, salt, and pepper. Scramble egg in saute pan with vegetables. Heat 1 8 in flour tortilla, place in scrambled egg, vegetables, and sausage, top with cheese.
