Mixed Berry Cheesecake- Alicia Silverstone

3/4 cup Earth Balance butter2 cups graham cracker crumbs1(12 oz) pkg silken tofu1 cup nondairy cream cheese1 T safflower oil1/4 cup maple syrup (1 - 2 teas. if using fresh fruit)1/4 cup soy milk2 teas. arrowroot1 teas. vanilla ext.1/2 teas. lemon or orange extractfresh mixed berries for topping (or thawed frozed mixed)
Preheat oven to 350
Melt butter. Remove from heat and mix in graham crumbs.
Press crumb mixture to bottom and sides of "oiled" springfoam pan. Bake for 5 min. Set aside to cool.
Add remaining ingredients (not the berries) to a blender or food processor. Pour mixture on top of crust. Use a spatula to smooth out the mixture.
Bake for 45 min to an hour. Let cheesecake cool to room temp. Toss fresh berries with 1-2 t of maple syrup. Top the cheesecake with the berries and chill until ready to serve.
