Bob's Red Mill Cornbread #2

Ingredients
1 cup corn meal (coarse grind)1 cup whole wheat flour1 cup skim milk1 egg1/4 + 1 T unsalted butter, melted (cooled)4 teaspoons baking powder1 Tablespoon sugar1/2 tsp. salt
Directions
Stir together corn meal, flour, salt, baking powder and sugar with a wire whisk until well-blended. Add milk, egg and butter and stir until dry ingredients are just moistened. Do not overmix.
Pour into 8" square greased square pan or similar sized round pan. Bake at 425 degrees for 20 to 25 minutes until top is light golden brown. Cut into 8 equal pieces. Serve warm.
