Honey Dijon Chicken with Whole Grain Brown Rice

3 Cups Uncle Bens Natural Whole Grain Brown Rice1 lb. chicken breasts, boneless2 Cups mushrooms1 Medium Onion, chopped3 Cups broccoli1 Garlic Clove, minced1 Tblp. Honey3 Tblp. Dijon Mustard1 Tbsp. Balsamic VinegarNonstick Natural Cooking Spray
1. Cook rice according to package instructions.
2. Heat large skillet with cooking spary, over medium high heat and add cubed chicken.
3. Cook chicken 3-5 minutes until chicken is brown and partially cooked.
4. Add broccoli, mushrooms, onion, & garlic. Cook 4-5 minutes until veggies are tender, yet still crisp.
5. Stir mustard, honey, and vinegar into rice.
6. Cook 2-3 minutes until well blended.

ACTRDREAMR
This was very delicous, I find it very hard to believe it was only 122 calories? I did make some alterations, I used frozen brocolli because I had it available, and I added the items in #5 to the chicken in step #4, it created a nice sauce to soak into the chicken. I made 1 cup rice for 2 serving. - 4/16/10
