Baked Falafel

Ingredients

1 can of chick peas, drained1/2 cup cilantro chopped1/4 cup onion minced1 clove garlic minced1/2 tsp salt2 tsp cumin1/4 tsp baking soda1 T flour2 tsp olive oil
Makes three large patties.
Preheat oven to 400 degrees
In a food processor pulse chick peas, onion, garlic, cilantro, cumin, salt and soda. Transfer into a bowl and stir in flour.
Let rest for 10 minutes.
In a cast iron pan, heat 2 tsp olive oil. Form chickpea mixture into 3 patties and cook a couple of minutes on each side.
Then slide pan into a 400 degree oven and bake for 10-15 more minutes, until fairly golden and crispy looking on the outside.
serve with pita and tahini dressing, lettuce, tomato and sliced red onion.
