Buttermilk Cornbread Muffins

Ingredients
*Quaker Yellow Corn Meal, 1 cup *All-Purpose White Flour, 2 tbsp *Baking Powder, 2 tsp *Arm & Hammer Baking Soda, .1/4 tsp *Great Value Iodized Salt, 1/8 tsp *Sugar - Granulated, 1 tsp *Grade A Large Eggs, 1 egg *Buttermilk (Reduced Fat 1.5% Milkfat)(Lucerne), 1 cup *100% canola oil, 2 tsp
Directions
Preheat oven to 400 degrees. Mix all of the ingredients together. Pour into a 6 muffin pan. Place in oven and bake for 20 minutes. If not brown enough after the 20 minutes, turn on broiler until muffins are browned to your liking, no longer than 3-5 minutes.

    I'm at high altitude and batter seemed a little soupy to me, following directions exactly, so I added 2 more tablespoons of flour and increased baking temp to 425, checked at 10 minutes and found they were done. Turned out fine, and ended up with 11 muffins, so will refigure calorie count. 😊 - 5/9/17

    This recipe did not work for me. I don't know if it was because I used dry buttermilk or because I live above sea level, or if it was just the recipe. Too much batter, muffins collapsed and wouldn't stay together, and the flavor was not that great. - 6/27/10

    This was great. I did change a couple of things. I used 1 1/2 tsp Stevia Powder instead of sugar (I like mine sweeter so it's equivalent to appx 1/4 c sugar) & Non-Fat Buttermilk instead of low fat so the calorie count is a little less. This is a very satisfying recipe. Really hits the spot! - 2/6/10
