4 - small red potatoes, cubed2 Tbsp. vegetable oil 1/2 cup yellow onion, chopped1/2 cup bell pepper, chopped4 - medium mushrooms, sliced1 cup ham, chopped3 large eggs1.5 oz velveeta cheese
In a large nonstick skillet, heat vegetable oil. Add potatoes and cook until tender.
Add onions, pepper and mushrooms. Cook until soft, stirring frequently.
When softened, add ham and cook until thoroughly heated. Crack open eggs over mixture and flip until eggs are cooked. On top, add cheese. Let cook until melted. Serve hot.
Makes 4 1.5 cup servings.
