Ezekial Penne with Sausage, Spinach & Mushrooms

140 grams of ezekial 4:9 (or wjole wheat) penne, uncooked2 turkey sausages1 tsp coconut oil3 cups fresh baby spinach leaves1/2 cup diced onion2 cups sliced mushrooms2 tsp crushed garlic2 tbsp freshly grated parmesan
Cook pasta according to package directions.
Meanwhile cut sausage into diagonal slices. Cook in a large, non-stick skillet. Remove from pan, and if necessary add coconut oil to pan. Add mushrooms and onions and cook until onion is transparent and mushrooms are cooked. Add spinach and heat until spinach is wilted. Add garlic and heat through.
Drain pasta and toss with skillet mixture.
Serve with a little grated parmesan on top
