Black Eyed Pea Salad

Ingredients
1 tsp Dijon mustard2 Tbl. Cider Vinegar2 Tbl. Canola Oil1 can (15 oz) black eyed peas(drain & rinse)1 can corn or frozen corn, thawed (10 oz)1/2 red bell pepper, diced2 scallions, thinly slicedSalt & pepper
Directions
Whisk together mustard, vinegar and oil. Add remaining ingredients. Refrigerate for at least one hour. Bring to room temperature before serving.
