Rumbamel's White Pepper and Cheese Mashed Potatoes

-30.1 oz russet potatoes (I grabbed 3 med. sized ones) cut into bite size pieces-3 C Fat Free chicken broth like Aldi's Fit n Active-2 T Smart Balance Omega Light Bettery Spread (28g)-1/2 t white pepper-a few dashes of dried parsley-about a 1/2 T dried chives -1 C Six Cheese Italian shredded cheese (has about 80 cal per 1/3 C)
--After cleaning, cutting and cleaning the potatoes again, put them in a large pot and cover them with the chicken broth. Cover and cook on med/high until tender.
--Mash up over low heat until desired consistancy and then add the butter and other spices/ingredients. Mix well and turn off heat after adding the cheese and stirring again.
--Makes about 5 C or 10 servings of 1/2 C each.
--Enjoy!!
