Grilled Jamaican Jerk Chicken

3 chicken breast halves, cut into chunks 2 limes1/2 cup Water1/2 tsp. brown sugar1 tsp allspice1/4 tsp nutmeg1/2 tsp salt1 tsp thyme1/2 tsp ginger1 tsp black pepper1 Tbl canola oil1 small onion3 scallions3 cloves garlic1 jalapeno pepper or habanero
place chicken in bowl and pour juice from limes and water over. Put aside. in food processor, combine ingredients - brown sugar through pepper. Blend until smooth. Add to chicken in bowl (saving 1/4 cup or so for basting. Marinade at least 2 hours. Place on skewers and cook on oiled grill until no longer pink. Baste and turn frequently. Serve with fried plantains. Serves 4-6
