Ingredients
2.5 cups Low Sodium Chicken Broth1 Roma Tomato 1 medium Carrot, raw1 Celery stalk, raw1 green onion (spring onion)4 Tbsp canned yellow Corn 1 Tbsp Kidney Beans1 Tbsp Taco Bell Home Originals Taco Seasoning Mix1/4 cup Armstrong Light Old Cheddar Cheese2 cups crushed Old Dutch multigrain bit size rounds
Directions
Add all ingredients in order listed, except for the chips
Turn Vitamix on variable Low, then quickly to 10
Turn Vitamix on High and let run for 5-6 minutes
Sprinkle chips on top of soup - Enjoy!

    I make this every month. It's so healthy and GOOD! Needs the high tech Vitamix or other machine. I almost always add cilantro, yellow squash, (1/4 of it) garlic, and a piece of red pepper too. Yummy! All my daughters in love adore it! - 7/29/10
