Amazing Spinach Dip

Ingredients
1 cup onions, chopped1 Tbs olive oil2 cans (14.5 oz) Mexican Stewed Tomatoes; drained & chopped1 can (4oz) green chili peppers, canned; drained1/2 cup Frozen spinach, thawed & drained2 cups shredded fat free Cheddar Cheese8 oz. fat free cream cheese, softened1-1/2 Tbsp red wine vinegar
Directions
1. Preheat oven to 400.
2. In a large skillet, saute onions in oil until softened; remove from heat.
3. Add remaining ingredients to skillet and blend together.
4. Pour into a shallow 9" baking dish and bake until bubbly and lightly browned. 30-40 minutes.
5. Serve with tortilla chips & add hot sauce as desired (not included in stats)
