Ingredients
7 egg whites3 egg yolks1 cup 2% cheddar or low fat shredded cheese1 cup chopped mushrooms1/4 cup chopped onion1/2 cup chopped red sweet bell peppersalt and pepper to tastecooking spray
Directions
Line a 12 cup muffin pan with foil baking cups. Spray the cups with cooking spray.
Blend egg whites and egg yolks in a mixing bowl. Add vegetables and cheese. Divide evenly among the muffin cups. Bake at 350 degrees for 20 minutes, until knife inserted in the center comes out clean.
Serving sizes makes 2 egg quiches
