Salmon Rice Casserole

15.5 oz can of Salmon2 cups rice, cooked1 cup onion, chopped1 tsp of margarine1 can of cream of mushroom soup (light version)1 small bag of baked potato chips, crushed
Preheat oven to 350F.
Drain salmon, but save the liquid. Break up salmon into a small pieces into a bowl; add cooked rice.
Cook onion in melted butter until tender, not brown, in a medium size pot. Add salmon and rice, salmon liquid, soup and mix until smooth.
In greased casserole dish place half of potato chips a long bottom evenly. Put salmon, rice, soup mixture on top of chips in casserole dish and top with the rest of the chips.
Bake uncovered for 30 minutes.
Makes 4 servings.
