Ham & Rice Casserole

Ingredients
2 cups brown rice, uncooked1 cup diced ham1 cup onion, chopped1 cup green pepper, chopped (opt'l)8 eggs, beaten
Directions
Cook rice according to package directions. In an electric skillet, saute the ham, onions and green peppers. Stir in eggs. Cook until eggs are done. Stir in the rice and serve. Makes about 8 - 1/2 cup servings.
