Oven roasted tatters and carrots

6 medium potatoes4 large carrots1 large onion4 tbsp extra virgin olive oilsalt & pepper
Wash and cut all potatoes into bite site chunks.
Cut carrots into 1/2 inch strips
slice onion into desired sized rings.
Pour on olive oil, sprinkle with salt and pepper, and toss well to coat all veggies. Cover with tin foil and bake at 350 for about an hour. Tossing half way through. Remove tin foil for last 5 mins to get the veggies a little crispier.
