Easy Curried Chicken

Ingredients
2 c. diced cooked chicken2 c. coconut milk/cream4 T Smart Balance spread3 T. whole-grain flour (soaked)1 T. curry powder1 t. chopped onion1/2 c. lemon juicesea salt and pepper to taste
Directions
Melt butter, then add flour and curry powder; cook for 5 minutes. Pour in coconut milk/cream and stir well until boiling. Add the onion, then put in the chicken seasonings and heat. Add lemon juice when ready to sedrve. Goes great with brown rice and vegetables.
