BLACK BEAN & VEGGIE SALAD / SALASA

Ingredients
1 - 16oz can Black beans1c fresh sweet corn, removed from husk1c cucumber, diced1c bell peppers, chopped, mix of red, yellow, orange1c plum tomatoes, chopped1c celery, chopped1c red onion, chopped6 cloves garlic, minced1 - Chipotle Chilis in Adobo Sauce, minced4T Adobo Sauce1/4c olive oil1/4c fresh lime juiceS&P to taste1T cumin
Directions
Chop and mix together all ingredients in a lage non-reactive bowl. Let sit for 2 hours to allow flavors to blend.

Makes 32 1/4cup servings

Note: If you do a large chop on all the veggies you can use this as a salad. If you do a small chop you can use this as a dip or salsa!
